Dry chickpeas
Fresh garlic
White onion
Fresh coriander
Fresh parsley
Salt

Rinse the chickpeas, then add 4 liters of water to soak overnight.
Drain the chickpeas and add them to a food processor. Blitz until you have a medium grind. Scoop into a bowl and set aside.
Roughly chop the fresh garlic, coriander and parsley as well as the white onion, and slide them into the food processor. Blitz until fine and place into the same bowl as the chickpeas.
Add the remaining ingredients to the bowl and mix until everything is evenly distributed
Tip: You can add a teaspoon of baking soda at this stage in order to get a fluffier falafel
Heat a pan of frying oil to 190 degrees Celsius. Use a traditional falafel scoop to make your falafels and drop them into the fryer. (If no falafel scoop in your kitchen drawer, a small ice cream scoop, or even two spoons, will do just fine!)
Fry the falafels until beautifully golden. This should take around 4.15 minutes.
Now enjoy your falafel the way you like it!
